I'm currently building a new PC and I'm looking for advice on which CPU would give the best price-to-performance ratio, especially considering I'm pairing it with a 9070xt GPU. Here are the options I'm considering, along with their prices in CAD: 8500g (6 core, 12 thread) for $199, 7600 (6 core, 12 thread) for $268, and 9600x (6 core, 12 thread) for $318. Any thoughts on what I should go for?

If you can find this bundle locally, it could be a steal: https://www.canadacomputers.com/en/amd-desktop-processors/272958/amd-r5-7600x-cpu-gigabyte-b650m-gaming-plus-wifi-motherboard-t-force-32gb-d5-6000mhz-ram.html.
Have you checked out the AM5 7500f? It's been shown to perform similarly to some of the x3D chips in recent benchmarks, so it could be a strong contender!
I’ve got the 7600x myself, and I’m really enjoying it. It works great for gaming without breaking the bank.
The 7600 is definitely your best bet for the price. It balances performance and cost really well!
I suggest steering clear of the 8000 series CPUs. They’re pretty much just mobile or office CPUs and won’t give you the gaming performance you’re looking for.
If you’re mainly gaming and decent FPS at 1080p is good enough for you, look for the 7500f priced around $160-180 on AliExpress.
I’m on 1440p, so I can’t go back to 1080p, haha!
