Currently, I have a Ryzen 5 3600, which has served me well for the past five years. I'm looking for suggestions on which CPU to buy, aiming for noticeable performance improvements—primarily for 1080p gaming on ultra settings. I'd prefer not to spend around €350-€400 for a 5700X3D, especially since I'll be changing the motherboard soon.

I'd recommend going for either the 5800X or 5800XT. Both are solid options for gaming and can easily handle your RTX 3070. If you're open to spending a bit more, check out the 5900XT or 5950X if you see them around €300. They'll give you even better performance!
I'd say go for the 5800X3D if you can find it for a good deal, but if you're really set on saving, the regular 5800X or even the 5700X are solid for 1080p ultra gaming. Just keep in mind, getting an X3D variant will likely extend the longevity of your system for another few years!
