I'm gearing up to build a new PC with some solid components: a Ryzen 7 7800X3D processor, Deepcool AK620 cooler, Kingston FURY 32GB DDR5 RAM, a GIGABYTE B650 EAGLE AX motherboard, Kingston FURY Renegade 2TB NVMe SSD, a be quiet! Pure Base 500DX case, and a be quiet! POWER 12 750W PSU. Currently, I'm deciding between two GPUs: the SAPPHIRE PURE AMD Radeon RX 9070 XT GAMING OC 16G for 838 EUR and the INNO3D GeForce RTX 5070 Ti X3 for 893 EUR. Is it worth spending the extra cash on the 5070 Ti, considering I'll be gaming at 1440p? Thanks for your advice!

Just get the 5070 Ti! You're not paying much more for a card that performs better.
You should definitely go for the 5070 Ti if you can afford it! There's roughly a 5% performance difference in non-ray tracing games, but Nvidia's features like DLSS4 make it a better deal overall. For just a bit more money, you'll get some great extra performance and features.
If you plan to use ray tracing a lot or enjoy upscaling, I'd say the 5070 Ti is worth it. You'll love the way it handles those visuals!
I've been using the 5070 Ti for a month now and it's amazing! The smooth performance with motion tech and DLSS really enhances gameplay. You'll enjoy this card!
Since the prices are so close, just go with the 5070 Ti. I've got a 9070 XT and it's great too with FSR4, but for the price difference, the 5070 Ti is the better choice.
Thanks for the info! I think I'm leaning toward the 5070 Ti now. Quick question: what's the difference between the brands like Gigabyte, INNO3D, and Palit? I see the INNO3D is 893 EUR, but the others are pushing close to 1100 EUR.
