I'm considering buying a graphics card from my friend who has an old GPU collection. He's offering me a 6700 XT for $200 or a 3070 Ti for $300. If price wasn't a factor, which one would be the better choice? I want to make sure I pick the right one for gaming and performance.

I'd go for the 3070 Ti. Even though it has only 8GB VRAM compared to the 6700 XT's 12GB, it has better memory bandwidth and runs faster overall. The 3070 Ti is on a 256-bit memory interface, which helps with performance in most games.
Good point! I guess it really depends on the games I want to play, right?
The 3070 Ti is about 20% faster and has DLSS support, but keep in mind it costs 50% more. Over time, newer games might even this out with the 6700 XT since it has more VRAM to handle textures better. Personally, I’d say the 6700 XT is a better deal for the price and extra VRAM.
True, but having enough VRAM is crucial too. Some games struggle with the 3070 Ti's 8GB, leading to stuttering or having to lower the settings. So, while it's faster, you'll also want to consider what games you'll be playing.
