I've been experiencing an issue where my internet speed is limited to around 1Gb, even though I'm subscribed to a 2Gb plan. Just a week ago, my speeds were normal, averaging between 1800-1950 Mbps. All my drivers are updated, and I'm using a cable capable of 2Gb speeds, which is properly connected to the right ports on both my router and PC. My motherboard has a 2.5Gb port, and my ethernet connection shows a link speed of 2500. I'm feeling stuck and could really use some help!

What router are you using? Not all routers support 2.5Gbe, so it's good to double-check if yours does. You mentioned getting speeds up to 1950 before, so it’s definitely possible with the right equipment!
Have you checked what your ISP contract states? If it says 2Gb, they should be providing that speed. It might be worth calling them again for more clarity.
