I recently installed a Cat 8 100% copper LAN cable along with new WiFi in my apartment. The service promises speeds of 2.5 Gb/s or at least 1 Gb/s, but I'm only getting around 200 mb/s. I have an ASRock H610M-HDV/M.2+ D5 motherboard and a 12th Gen i9-12900KS CPU. I'm not sure if I need to adjust any settings in the BIOS or elsewhere, and most videos I find on this topic seem outdated.

You might want to check with your ISP to make sure your network is properly provisioned. It's possible they're not providing the speeds you're paying for. I had a similar issue and found that I was capped at 100 Mbps when I should've been at 1 Gbps.
Let's clarify a few things. LAN, your LAN cable, and WiFi are different. Buying a Cat 8 cable is kind of overkill for home use. Also, mentioning '100% copper' is a bit odd since that's standard. Do you even know your internet speed? Are you using WiFi or Ethernet? It’ll help to get your facts straight before troubleshooting.
Sorry about that! I usually write like this. I bought the Cat 8 from Amazon, not knowing there were pricier options. I'm actually paying for 250 mb/s but I usually get around 220-230. I refer to Ethernet as LAN because that's how we've always called it.
Just a heads-up, be careful with copper-coated aluminum cables. They can be cheaper but often cause issues, especially over longer distances or with POE.
