I've been monitoring my PC for a few days, and I've noticed an issue with overheating. When I first start it up, the temperatures drop down to around 25-30 °C, which seems to rule out any problems with my AIO cooler. I'm starting to think it might be a BIOS issue rather than a hardware problem. If anyone has some insights, I would really appreciate your help!

Have you checked the AIO cooler installation? Sometimes, people forget to remove the protective plastic from the cooler or it might not be making good contact with the CPU. Just something to look into!
What CPU are you running? It's also a good idea to monitor your CPU usage when temperatures spike. If it’s a Ryzen 7 5800X, what kind of usage are you seeing during those early moments? Mine has stayed pretty stable around 6%.
Just to clarify, what exactly is the issue you're facing? It seems like it's overheating on cold starts, reaching up to 75 °C, which definitely isn't normal.
