I recently swapped out my graphics card for a 5060 Ti and noticed a massive spike in my ping. I used to have a stable 40-50 ms, but now it's jumping up to around 300 ms. I did use the Nvidia app to optimize my games, but I'm still experiencing this issue. Any ideas on what's causing this?

That's weird that your ping would be affected by a graphics card change. Are you sure it's not something like a poorly shielded Ethernet cable picking up interference from the new card? It could also be an issue with your motherboard. In theory, your network adapter shouldn't be impacted by your GPU.
Are you using frame generation? That can sometimes add latency. Also, check if you're running multiple power cables from your PSU to your GPU or if it's a single chained plug. It could affect performance a bit!
It's just one cord.
What were you using before the upgrade? Sometimes the specific settings and performance changes can affect your network, especially if you're running things on ultra now.
I switched from a GTX 1660 Ti.

I have a Gigabyte B450 AORUS ELITE V2, so I guess it could be a factor.
