I've been using my wireless mouse without any issues for about 2-3 years on my laptop. Recently, I switched to a new desktop PC (which replaced the old one), and for the first six months, everything was fine. Now, though, the mouse is acting really weird. It works perfectly for the first 5 minutes after I start using it, but then it stops registering movement correctly. It's super finicky, and after letting it sit for a bit, it resumes working normally for a short time again. I've tried checking the drivers and doing file integrity checks, and I even deleted the mouse compliant device, but nothing seems to fix it. Interestingly, when I use it on a book, it performs flawlessly, but on my polished wood table, it's a mess. I've used that table as a surface for years without issues. Did something change with my mouse or my table? Should I invest in a mousepad?

It sounds like your mouse sensor might be getting worn out or dirty. I’d suggest getting a mousepad just in case. If the problem continues, it might be time to think about a new mouse altogether.
Have you considered that your dongle might be overheating? This can sometimes affect performance. If it's getting warm, that could be part of the problem!
It is a bit warm. Should I be worried about that?
