I recently replaced my EVA 500W power supply with a Rosewill 750W unit. I've connected the 12x2 and 4x2 cables to the motherboard, along with a 4x2 to the GPU. However, when I attempt to power it on, the fans start spinning but stop almost immediately. I'm really stumped and would appreciate any advice on what might be going wrong. Also, do power supplies need to 'charge' or anything before they work? I know it sounds a bit silly, but I thought I'd ask!

Nope, the PSU doesn’t need to charge or anything like that. I’d recommend double-checking all your cable connections to make sure they’re correct and secure. Sometimes the issue might just be something simple like an incorrectly plugged cable.
Lol, that's a common worry! I actually had a similar issue, and it turned out I had a problem with my SATA cable as well. I was using one from my old PSU, and that created some conflicts. Switching it out fixed my booting issue, so definitely give that a try!
