I'm currently running an I7-11700, GTX 1080, and 32GB of RAM in my system. I plan on using a 500W PSU temporarily until I can get a 750W PSU. Is it feasible to run my RTX 3080 with that 500W PSU if I undervolt it?

You could also try adjusting the power limit as a workaround, but honestly, if it's just temporary, sticking with the GTX 1080 until your new PSU arrives is a solid plan.
I lent my friend a 1080ti, and he faced nonstop issues with a 550W PSU, so be careful. Undervolting might not be reliable. It’s best to get the PSU you really need to avoid problems. Depending on your CPU, you might even want an 850W PSU.
It might work, but be prepared for it to shut down unexpectedly. If it happens, I’d switch back to your GTX 1080. Since you’ve already ordered a 750W PSU, it’s probably better to just wait for that.
The CPU only pulls about 65W, so I'm not overly concerned about it.
