I recently got my wife into gaming with GTA 5, and we're looking forward to playing a lot of GTA 6 (whenever it comes out) on a 4K TV, using DLSS. We also plan to play Battlefield 6 on a 1080p monitor aiming for 180 FPS, along with a few other AAA titles, ideally at 60 FPS max. Here's what we're working with: CPU: 12400F, RAM: 32GB 3200 CL16, motherboards: H610HK, PSU: Corsair GS750, and currently a 1050 Ti 4GB. I'm wondering if the 5060 Ti will bottleneck the 12400F in these scenarios? Any suggestions or advice would be appreciated!

It's a massive upgrade from a 1050 Ti for sure! However, whether the 12400F will bottleneck the 5060 Ti depends on the games. For now, many titles, particularly CPU-heavy ones like GTA V, might hold back your framerates if they are CPU intensive. Some games might run fine, but with newer games, you may find yourself dialing back settings.
Honestly, expecting 4K max settings on a 5060 Ti is a bit unrealistic. Even with DLSS, you're going to have to compromise on settings quite a bit to get decent performance, especially in newer games. Just keep an eye on the system requirements when games launch.
When GTA 6 finally drops on PC, don't expect to run it at 4K with a 5060 Ti. Historically, it might take a couple of years after the console release, and even then, the framerate is likely to be pretty low. This GPU just isn't powerful enough for 4K gaming in demanding titles.
