I'm curious if pairing the Ryzen 5 7500F with an RX 7800 XT will result in any bottlenecking when playing games at 1080p. Alternatively, would I be better off with an RX 7700 XT?

There will always be some level of bottleneck in a PC unless all your components are the absolute best. However, with the Ryzen 5 7500F and the RX 7800 XT, I wouldn't worry too much. That GPU is more than enough for 1080p gaming, and you'll likely get solid performance without needing to upgrade to something like the 7800X3D or 9800X3D.
Have you considered whether the RX 9060 XT with 16GB might be a better choice for 1080p?
