I have Apple Pay set up on my credit card, and I usually pay my Apple bills with it. Unfortunately, I had to max out my card due to an emergency. I've already put a significant amount of cash on my card, but it will take a couple of days for that to process. In the meantime, I'm getting a notification on all my devices asking me to update my payment information. I really don't want to change anything, as I just need a few days for my balance to get back below the max limit. Is there any chance Apple will cancel my account because of this delay? Should I reach out to someone at Apple about it?

Don't worry, they won't cancel your account just because you're waiting for your payment to process. You'll just see that reminder until you successfully make the payment. It should automatically try to charge your card again once the funds are available.
