I'm thinking about upgrading to the AM5 platform but I currently have a GTX 1070 Ti. I want to know if the Ryzen 5 7500F will be bottlenecked by my GPU or if this combination will work well for gaming.

With this setup, the 1070 Ti is likely to be the bottleneck for anything you throw at it. In gaming, having the GPU as the bottleneck is what you usually aim for.

You generally do want the GPU to be the limiting factor in games. But it makes you wonder if your current CPU is already enough to push the 1070 Ti to its limits!

If you're building a gaming rig, having the GPU as the bottleneck is ideal! I assume you're looking to upgrade your graphics card later on? The 1070 Ti will still perform well on a newer platform while you plan your next steps.

Yes, your GTX 1070 Ti might be the bottleneck here, and honestly, that's okay! Ideally, you want the GPU to be what's holding back performance, especially in gaming scenarios.
