I've heard that it's usually fine if the RAM isn't on the QVL (which isn't comprehensive), especially if there are other RAM kits listed with similar specs. My RAM has timings of 30-36-36-76 and operates at 1.35V. There's a kit on the QVL with the same timings but a higher voltage of 1.4V. Does this mean my RAM won't run at full speed with this motherboard?

You should be just fine! These days, QVL isn’t the end-all-be-all. I've used RAM not on the list before without running into issues.
Two sticks at 6000MT/s with good timings? There’s a solid chance it’ll work perfectly. QVL is pretty much just suggestions nowadays!
Honestly, I ignore the QVL too and haven’t had any problems. It really depends more on the RAM's manufacturer than the QVL itself—just make sure it's from a reputable brand. I've always been good with G.Skill and Corsair.
