I couldn't find any info online about whether this is part of a legitimate promotion or something else. I asked some friends who are long-time iPhone users, but none of them have heard of it either. That email is from a real Apple domain, so it’s possible that someone close to you wanted to surprise you, or you might have unknowingly been part of an Apple promotion. Just be cautious if the email prompts you to click any links that lead to a non-Apple website asking for your Apple ID or password. If you want to be really sure, you could contact Apple Support and ask them to help you verify the gift card through screensharing.
I redeemed a similar gift card without issues! My friends and I are pretty close, and I doubted that someone would just give me such a big amount out of nowhere. But I went ahead and redeemed it, and the money showed up in my account without problems. The key is to make sure you stay cautious and not share your account info.
