I recently inherited a Dell PowerEdge R540 server, but I'm unsure about its age and performance, although it seems to work fine. I'm considering deploying the Veeam Hardened Repository ISO on it, adding some large disks (around 70TB with 3.5-inch drives) and boosting the RAM. Do you think it's worth the effort to set this up?

If you're using it for non-production, home lab, or SMB purposes, I say go for it! But for production environments, you might want to think twice. Those execs won’t want to hear excuses about failed backups on outdated hardware.
To check the exact age and specs, go to the Dell support site and enter the service tag. This will give you all the details you need, including warranty info.
There's definitely still a lot of life left in the R540! It's an older model, but you can get it running nicely with the right setup.
