I left my new x870e in its box on the back seat of my car for a few days, and it was over 100°F outside. The back windows are slightly tinted, and the board was sealed in the box under a jacket, but I'm feeling paranoid that the heat might have damaged it. Is there something I should be concerned about?

Hey, don't stress too much! As long as your car didn't heat up beyond 360°F, your x870e should be fine. It's pretty unlikely that it reached those temperatures inside.
All components on motherboards are rated to handle at least 160°F, so your board is probably good to go. Everything is designed to operate at temps above what you left it in.
Just to add, if the solder didn’t melt, there shouldn’t be any issues. Most chips work fine well above 100°F anyway!
Don't forget, the hot air coming from your system when it’s running is much hotter than what your car would have gotten! You’re probably in the clear.
Thanks for the reassurance! I was getting really worried about it.
