I'm looking into liquid cooling for my GPU, which is a little pink Yeston single-slot RTX 3050. The stock fan is pretty noisy, and I'd love to replace it with a liquid cooler. Given the size of the card, I'm not sure if a standard GPU water block would fit. Would it be possible to use a budget water cooler from Amazon instead? It's somewhat similar in design to a low-profile MSI GT 1030.

Just a heads up, disconnecting the existing fan could actually disable the GPU altogether, so be cautious about that!
It's probably not going to work out well. In general, you might find a better cooler specifically designed for graphics cards, but upgrading the cooler is tricky. You could potentially find a compatible water block, but you'd likely need a closed loop cooler instead of a simple all-in-one unit.
That setup won't work effectively. Besides cooling the GPU, you'll also need to consider the RAM and voltage converter on your card. You might be better off trying a DIY mod—like using a fan and zip ties to secure it instead!

The contact between the cooling block and the GPU might not be sufficient for effective cooling. If you're really trying to boost cooling, consider leaving your case open with a regular desk fan blowing directly into it. I did that with my old GTX 7950, and it made a huge difference!
