I'm looking to shift away from Google Drive and want a cloud storage solution where my documents and photos are safe from AI training initiatives. Ideally, I want to find a company or service that explicitly does not use AI at all in its operations.

If you really want to avoid AI training in the long run, consider building your own NAS. It lets you create a cloud solution right on your hardware, plus you maintain complete control over your data.
Check out Sync.com, Proton Drive, or kDrive. They’re known for their commitment to privacy and don’t utilize AI for their services.
You can use rclone crypt to encrypt your documents, ensuring that nobody can access your files.
iCloud Drive is another alternative, though you might want to investigate their policies on AI.
Setting up a NAS (Network Attached Storage) at home could be a great move. You can manage your own cloud storage and back it up to services like Backblaze. Otherwise, Dropbox could be an option too.
