I have a question about powering the RTX 5070 OC graphics card. I've seen adapters that convert a 12-pin connector to dual 8-pins available online. Will this setup work with a RM850x power supply unit? Additionally, does the RTX 5070 come with the necessary adapter in the box?

The RTX 5070 usually comes with a 2x 8-pin to 16-pin adapter right out of the box. Using these types of adapters is perfectly fine, even with an 8+8 daisy-chained cable. The card has a thermal design power (TDP) of 250W, which is within the safe limit for these setups (288W).
If you go for a new RM850x, it should include the 2x 8 to 16-pin cable you need. If you have an older version, you can either buy the right cable from Corsair's website or use the adapter that comes with the RTX 5070.
Don't worry! You can use the 8-pin connectors in the meantime. Just make sure you get the proper 16-pin cable from Corsair or use the adapter that came with the 5070 for the final setup.
No, you cannot use that adapter. The 5000 series requires a 16-pin 12vhpwr connector. The 12-pin cables you might have seen are specifically made for the 3000 series founders editions.
Wait, the only cable I got is the 12-pin to the PSU, but the RTX 5070 needs a 16-pin. Should I just get a different cable or what?

I got most of my build assembled at Micro Center, and they only gave me a 12-pin cable from the PSU to the GPU. However, the RTX 5070 actually requires a 16-pin connector. The box does have some 8-pin to 6+2-pin connectors, but I'm confused about how to proceed.
