I'm currently using 2x8GB 3200MHz CL16 RAM sticks and I'm thinking about mixing them with a single 16GB 3200MHz CL22 stick. I get that mixing can lead to slower speeds, but I wonder if having 32GB of RAM would be more beneficial than just sticking with 16GB. Any advice would be appreciated!

It all depends on your usage! If you primarily game at 1080p, you probably won't hit that 16GB limit, so adding more RAM could slow you down instead of helping. But if you really need the extra RAM for multitasking or specific applications, then 32GB could provide a boost, even at the lower speeds.
Honestly, why not just try it out? You might be surprised by how it performs! Experimenting could give you the best answer.
Mixing RAM sticks can definitely lead to system instability. My advice would be to stick with just 16GB in this case and consider selling the CL22 stick instead of risking compatibility issues.
While you could technically mix them, it’s likely that your RAM won't operate at 3200MHz. It might fall back to a slower speed, like 2133MHz. If you're already using more than 16GB, the extra RAM could be worth it, but otherwise, it’d be slower than your current setup.
