Since Nvidia prices are climbing, you might want to look at the 9070XT. It's priced similarly to the 5070 but offers better performance. Honestly, you don't need to look for anything above that.
If you're avoiding Nvidia on AM4, I suggest the 9060XT 16GB or 9070XT. They tend to have fewer CPU overhead issues than Nvidia cards on your platform.
