I've been gaining experience as a Multicloud Administrator for about nine months now and I hold several certifications including the Azure Administrator Associate, Azure Security Engineer Associate, Azure Solutions Architect Expert, and AWS Certified Solutions Architect – Associate. I recently got a voucher for an AWS certification. Given my background, which Associate certification should I aim for next to enhance my job prospects?

I've gone through the Developer cert, and while it has similarities to the Solutions Architect, I've also tackled the Data Engineer cert, which was decent. The AI certifications are becoming quite relevant right now and shouldn't be too difficult. DevOps sounds exciting too because it includes practical work. If I were you, I'd consider this order: 1. AI certs, 2. Data Engineer, 3. Solutions Architect Professional, 4. Developer (since it overlaps a lot with SAA), and finally, 5. DevOps.
I think the Developer certification is a good choice for you. It builds on what you already know from the Solutions Architect.
You might want to look into the CloudOps certification. It shares a lot of content with the Solutions Architect and adds a bit about multi-organizational setups.
