I've recently purchased a few power supply units, the RM1000x and RM1000X Shift, but both of them have had coil whine issues. Is there a particular PSU model that tends to have less or no coil whine?

If you really want to avoid coil whine, consider getting older. Between aging and hearing loss, you might not even notice it anymore!
You know, you could always just wait a bit. I found that after running my setup for a month or so, the whine got noticeably quieter. Sometimes it just takes some time for things to settle.
Honestly, dealing with coil whine can be all about luck. It's usually not the PSU that's the main culprit; it often has to do with the GPU itself. Typically, the design of the GPU with its inductors or capacitors can cause that annoying noise. You might want to try limiting your FPS or undervolting your GPU—this has helped some people reduce the sound. Heavy coolers and thick thermal pads can also dampen the noise from those components.
I had instant coil whine as soon as my PC powered up, and there was literally no load on the GPU. I ended up returning the GPU because I just couldn't justify having that noise, especially after spending over 200 bucks.
