Why is my GPU underperforming in games?

I'm experiencing really low FPS in games like Fortnite, Valorant, CS2, and Rust, despite my PC's specs suggesting it should handle them easily. Here are the details:

- GPU: GTX 1060 6GB
- CPU: Ryzen 7 5700G
- RAM: 16GB (single stick, 2666MHz, overclocked to 3200MHz)

Interestingly, I had a moment in Valorant where my FPS jumped to over 200, even while the PC was running hot at around 80°C. But after restarting, the performance dropped again. I've tried reinstalling drivers, tweaking in-game settings, and using MSI Afterburner with no success. Any suggestions would be appreciated!
