I'm thinking about upgrading my current setup from a 9600X with an RTX 4060 to a 250K Plus paired with an RTX 5070, especially since I want to finally make the jump to 1440p gaming. I've been gaming at 1080p for over ten years. I've read that the 250K Plus outperforms my current CPU in benchmarks, often even beating the 9700X. Also, I'm planning to build a mini-ITX rig in all black to save space, moving from my current all-white mid-tower setup. Plus, I'm getting into video editing, so I want to make sure this combo covers that as well.

Honestly, you don't need to switch out your motherboard for a slight improvement. Just upgrade to the RTX 5070 and you'll be set!
If gaming is your main focus, I'd suggest keeping your current setup and just getting the new GPU. Your 9600X is still performing well, and the GPU will have a bigger impact at 1440p than the CPU.

Good point! I just edited my post to mention that I'm also getting into video editing and need a smaller black mini-ITX case.
