I think Linux Mint with the XFCE environment would run fine on that setup. It's lightweight and user-friendly, which is perfect for simple tasks like checking email and social media.
If you’re okay with experimenting, even a newer distro like Tumbleweed can perform well. Just use XFCE to keep it lightweight.
I’ve heard LXQT is the successor to XFCE and can work well on these specs too. But with 8GB of RAM, you could also run KDE Plasma for a nicer interface. It really enhances the user experience. Debian is another option that might save some resources.
