I'm trying to understand what practical differences there are between 16GB, 24GB, and 32GB of RAM. For example, how well could each handle gaming, web browsing, watching videos, streaming, recording, and multitasking at the same time? I'm also curious whether having more RAM improves performance directly or mainly prevents slowdowns when the system runs out of memory.

Gaming, browsing, watching videos, streaming, and recording can generally all be done with 16GB, depending on the game and how many browser tabs or other programs are open. Some demanding games and heavier multitasking can push past that, so 32GB gives you more headroom and is often the safer new-build choice. 24GB may be plenty for gaming, but it is less common and may have fewer upgrade options depending on the memory configuration.
RAM capacity mainly determines how much you can keep open at once. If your system has enough RAM for the operating system, game, browser, recording software, and everything else, adding more won't make those programs inherently faster. Once RAM fills up, the computer starts moving data to the storage drive, which is much slower and can cause stuttering or general sluggishness. For most people, 16GB is still usable, 32GB is a comfortable choice for modern gaming and multitasking, and 24GB sits between them if your workload fits that amount.
The exact RAM speed and timings also affect performance, but capacity comes first. Faster memory can improve CPU-limited game performance a little, while extra capacity mostly prevents performance from collapsing when memory is exhausted. Video editing, virtual machines, large creative projects, software development, and local AI tools can benefit from 32GB or much more. For ordinary gaming and everyday use, going beyond 32GB usually provides little benefit unless you have a specific workload that needs it.
Virtual machines are another good example: each one can reserve several gigabytes, so having more RAM lets you run them without starving the main system.
