I've been using Windows 11 for about a year and really haven't enjoyed the experience. I tried Linux Mint a few months ago and found it polished, straightforward, customizable, and functional, but it still didn't feel like the right fit.
I mainly use my computer for gaming, watching media, studying, schoolwork, listening to music, and similar everyday tasks. I'm looking for a distribution that's beginner-friendly and easy to understand, while also offering plenty of customization options for changing the desktop's appearance and workflow. I'd prefer something less obvious than Ubuntu, Mint, or similar mainstream choices, but I'm open to suggestions.
What distributions and desktop environments would be worth trying for these needs?

Fedora or a Fedora-based distribution would be a safer starting point than a bleeding-edge Arch-based system. You’ll get reasonably current gaming software without quite as much maintenance risk. If you want a rolling release but something less aggressive than Arch, openSUSE Slowroll may be worth investigating. For the desktop, KDE Plasma is probably the best match for heavy customization.
CachyOS, Garuda, Nobara, Bazzite, and PikaOS are worth looking at if gaming is the priority. CachyOS and Garuda are Arch-based and offer convenient installers and good hardware support, but they use a rolling-release model. That means you get newer drivers and software, but updates can occasionally introduce problems and should be installed regularly.
The distribution itself usually matters less than the desktop environment and the software repositories behind it. Most mainstream distributions can handle gaming, media, schoolwork, and music. Since you want something customizable, Fedora KDE is a strong option: Fedora is relatively stable and well documented, while KDE Plasma gives you lots of control over the layout and appearance.
