I changed the CPU fan, CPU OPT fan, and three system fans from Normal to Silent mode in the motherboard settings. I also changed the temperature interval to 3 for each fan. The computer is about five years old, and I have never adjusted its fan settings before. I mainly want the fans to be quieter while recording, but I want to make sure this will not damage the PC or cause overheating. Is Silent mode safe for everyday use, and should I switch back to the original settings during demanding tasks such as gaming?

That should generally be safe. Silent mode usually makes the fans ramp up more gradually or run at lower speeds, but the system can still protect itself if temperatures get too high. The main thing to watch for is thermal throttling, where the CPU lowers its performance to reduce heat. Check temperatures while gaming or running other demanding workloads, and consider switching to Normal mode if temperatures become excessive.
Monitor the CPU temperature under a workload rather than judging it only at idle. Staying around 50°C while running several applications is excellent, though games may produce more heat. As a general rule, try to keep the CPU below roughly 85°C during sustained heavy use. If it reaches the high 80s or 90s, increase the fan settings and check that the fan curves and cooling hardware are working properly.
I tested it with FL Studio, OBS, and Premiere Pro running together, and the CPU stayed around 50°C. I’ll keep an eye on it during a demanding game and raise the fan speed if the temperature climbs.
