Does this seem like a good deal, and is the hardware still suitable for those games?

For $1,200 AUD, it sounds like a reasonable to very good deal if the parts are genuinely unused and everything works. The 5900X, 32GB of RAM, 1TB SSD, motherboard, cooler, and case add a fair amount of value. The RTX 3060 Ti is still capable for 1080p gaming and should handle GTA, Call of Duty, and Rocket League well, though it’s the least impressive part of the build compared with the rest.
The system should be more than adequate for those games, but check the age and condition carefully before buying. A three-year-old liquid cooler may need attention even if it has barely been used, and the SSD, power supply, and graphics card should be tested. If you wanted to reduce the cost later, you could potentially replace the 5900X with a cheaper Ryzen 5 5600, although keeping the 5900X gives you plenty of extra CPU performance.
