I'd like to upgrade something, but current graphics card prices feel pretty unreasonable, especially since I'm considering a 5070 or 5070 Ti. I was thinking about replacing the 5600X with something like a 5800X3D or moving to a newer platform with a 14600K, which might give me a worthwhile performance boost and keep me satisfied for another year before the next GPU generation. I play at 1440p on an ultrawide monitor running at 165 Hz. Would upgrading the CPU first make sense, or should I hold onto my current system and prioritize the GPU?

You may not need to upgrade yet. A 3070 and 5600X are still a balanced combination for 1440p, even on an ultrawide. Unless you are specifically chasing much higher frame rates or dealing with noticeable stutter, waiting for more reasonable GPU pricing or the next generation could give you a better upgrade than changing one part now.
A 5800X3D is still a strong drop-in AM4 upgrade, but it can be expensive for the performance it adds. If you have access to one at a good price, a 5600X3D would be a better-value option, while a 5500X3D could also be worth considering if it is significantly cheaper. Otherwise, keeping the current CPU and saving for a better graphics card may be the smarter move.
Before buying anything, check whether your games are actually CPU-limited. Stuttering during busy scenes, low GPU utilization while playing at high settings, or frame rates that stop improving after lowering resolution are signs that the processor may be holding you back. If the 5600X is running your games smoothly, a GPU upgrade will make more sense at this resolution.
If you want the biggest immediate gaming upgrade, look at a Radeon 9070 or 9070 XT and keep the 5600X for now. Compared with the 3070, those cards can provide a substantial performance jump, and the 5600X should still be capable of roughly 100 FPS in many 1440p games. Upgrade the CPU later if you start running into a clear bottleneck.
