Part of the process is likely confirming that the person picking up the order matches the customer information, although the QR code and your ID may already handle most of that verification.
The feature is called Connect and Personalize. It gives the employee a limited view of your Apple profile, including your devices, possible trade-in values, whether your devices have recent backups, and which ones have AppleCare+. It may also show whether you qualify for trials such as Apple Music or Fitness+. Your name and email can be filled in automatically so the store can send your receipt.
