I'm upgrading a second PC that has only two RAM slots. Should I buy a matched 2×8GB DDR4 kit now and use 16GB in dual-channel mode, or buy a single 16GB stick and wait until prices drop before adding a second one?

I’d still choose 2×8GB even if you might upgrade later. Finding a matching 16GB stick months from now isn’t guaranteed, and mixing kits can sometimes cause compatibility or stability problems. You could sell the 2×8GB kit later when you move to 2×16GB.
Go with the matched 2×8GB kit. Two sticks let the system use dual-channel memory, which provides noticeably more bandwidth than one 16GB stick. The difference is especially worthwhile for gaming, integrated graphics, video editing, 3D work, and heavy multitasking.
If you genuinely need 32GB immediately and can’t afford a matched 2×16GB kit, one 16GB stick is usable, but it will run in single-channel mode for now. For a normal 16GB setup, 2×8GB DDR4—ideally around 3200–3600 MT/s with reasonable latency—is the better choice.
The dual-channel recommendation is mainly about bandwidth, not just capacity. DDR4 systems benefit substantially from having two sticks, while newer memory standards handle single-stick configurations somewhat differently.
