I prefer the larger 27-inch screen and would use 1440p for browsing, work, and general desktop use, but I expect to play competitive games at 1080p on low settings to maximize FPS. Would a 27-inch 1440p 240Hz monitor be a good choice, or will 1080p look noticeably blurry when scaled to 1440p?

It can still be a good choice, especially if you value the sharper 1440p desktop experience. However, 1080p does not scale evenly to 1440p, so it usually looks softer than native 1080p. If your competitive games can maintain close to 240 FPS at 1440p low settings, playing at the monitor’s native resolution will generally look better than dropping to 1080p.
If you are certain you will spend most of your time gaming at 1080p, a native 1080p 240Hz monitor may give you a cleaner competitive image. A 1440p 240Hz model makes more sense if you are happy to use 1440p in games and want the extra sharpness for everyday desktop use. Check whether the monitor has a good scaling mode, but that will not completely eliminate the softness of non-native resolution.
Be cautious with the 1080p plan. On a 27-inch 1440p display, 1080p can look noticeably blurry because the pixels do not map cleanly. You may prefer 1440p low settings instead, since games such as Valorant, Rocket League, League of Legends, Overwatch, Rainbow Six Siege, and Fortnite can often run at very high frame rates with competitive settings, depending on the specific game and settings.
