I'm getting a new iPhone soon, and I want to transfer all the data from my old iPhone 5s. I prefer not to use iCloud since I'd like to keep my devices separate, and I'm concerned it might cause issues. I'm especially interested in preserving all my data, including those obscure apps that may not be available anymore. Could anyone share the best methods for this? Here are a few specific points I'm wondering about:

1. Is my iPhone 5s running iOS 12.5.1 too old to use the phone-to-phone Wi-Fi data transfer?
2. Can I visit an Apple Store to transfer using a cable, or is my iOS version too outdated for that?
3. Is it possible to back up through Finder on my Mac Mini and then restore it to the new phone, just like with iTunes? Can I expect to recover all my old apps?
