I currently have a Gigabyte A520M K V2 motherboard with a Ryzen 5 5500. Since the board is known to have relatively weak VRMs, I'm wondering whether upgrading to a Ryzen 7 5700X3D could cause stability, overheating, or performance problems. The system would mainly be used for gaming and everyday tasks.

Even though the motherboard has a modest VRM design, the 5700X3D is a relatively sensible choice for it. At worst, heavy sustained workloads could reduce boost performance slightly compared with a stronger board, but gaming performance should be very close to normal.
The processor may run warm, but that’s mostly a CPU cooler and case-airflow issue rather than a motherboard VRM problem. Use a decent cooler, keep the front and rear fans moving air, and the upgrade should work well for gaming.
You should be okay as long as you leave the CPU at its default power settings. X3D chips generally offer limited overclocking options, so you’re not likely to accidentally push extra power through the VRMs. The motherboard’s CPU support list and BIOS version are worth checking before installing it.
The 5700X3D should be fine at stock settings. It doesn’t draw an extreme amount of power in real-world use, and gaming loads usually won’t stress the VRMs as much as sustained all-core workloads. Make sure the case has reasonable airflow and that your BIOS supports the processor.
