A team renamed its built-in default channel, originally called "General," and users are now seeing synchronization problems when accessing the team files through OneDrive in File Explorer. Should IT rename the channel back to "General," or is the better fix to reset and recreate the sync connection on each affected computer?

The default channel is special because it exists in every team. Renaming it may not be fully supported or may cause confusing behavior, so changing it back could be worth testing, but I’d still expect client-side resynchronization to be necessary.
I wouldn’t assume renaming it back will repair the existing sync connection. The safer first step is to disconnect and resync the affected client. If that doesn’t work, users may need to remove the old connection and set it up again from scratch.
The renamed channel can probably remain as-is, but everyone connected to the files may need to recreate their synchronization setup. We had to do that for a small team once, and it was still fairly tedious.

That was my concern too—I wasn’t sure whether the default channel could actually be renamed reliably or whether the service would restore the original name.
