I'm new to building PCs and I'm not sure whether I need to connect the SATA/PATA cables from my power supply. My parts include a Corsair RM1000e PSU, an NVIDIA RTX 5080, a Gigabyte X870 Aorus Elite WiFi 7 motherboard, and a Samsung 9100 Pro 2TB SSD. Will this setup require any SATA power or data cables?

Keep the unused modular cables in the PSU box instead of throwing them away. You may want to add another drive or accessory later, and modular PSU cables aren’t universally interchangeable between different power supplies.
The Samsung 9100 Pro is an NVMe M.2 drive, so it installs directly into an M.2 slot on the motherboard. It doesn’t use SATA power or SATA data cables, meaning you won’t need those cables for the listed components.
SATA cables are only needed for SATA-based drives or accessories, such as 2.5-inch SSDs, hard drives, or older optical drives. Some fan hubs, lighting controllers, and liquid coolers may also use SATA power. If you don’t have any of those, you can leave the SATA cables disconnected.
