My daughter entered the wrong passcode too many times and now my iPhone 12 displays "iPhone Unavailable" without a countdown. It will not connect to Wi‑Fi, and my laptop does not recognize it when I plug it in, so I cannot restore it normally. I also started a remote erase, but it is still pending because the phone is offline. Is there another way to regain access?

Try recovery mode: connect the iPhone to the computer with a data-capable cable, then quickly press and release Volume Up, quickly press and release Volume Down, and hold the Side button until the recovery screen appears. Finder or Apple Devices should then offer an Update or Restore option. Choose Restore if the goal is to erase the disabled phone. If the computer still does not see it, try another cable, USB port, or computer and make sure the device software is current.
With no countdown, the iPhone has been disabled after too many failed passcode attempts. The usual solution is to erase and reinstall iOS using Finder on a Mac or Apple Devices/iTunes on Windows. This deletes everything on the phone, and you will need the Apple Account credentials afterward to activate it.
A remote erase cannot complete until the phone gets online. Since it is not connecting to Wi‑Fi, recovery mode is the better option if the computer can detect it.

If recovery mode does not work, DFU mode may be worth trying, but it is more sensitive to timing. A repair provider or Apple support can also check whether the port or cable is the problem.
