I'm upgrading from an i5-10600K because it is limiting performance in very CPU-heavy games such as Battlefield 6, especially with my RTX 5060 Ti. I play at 1440p and would prefer to keep using my existing DDR4 memory rather than move to DDR5. I've been considering an i5-14600K paired with a B760 DDR4 motherboard. Would that be a sensible upgrade, or would another platform offer better gaming performance for a budget of roughly €500?

There are also inexpensive AM4 bundles using a Ryzen X3D chip and a B550 motherboard. Some 5700X3D bundles can be found near the lower end of your budget and offer excellent gaming performance while retaining DDR4. Be cautious with very cheap marketplace listings and verify the seller, warranty, and exact parts before buying.
If you want to keep DDR4, an i5-14600K with a B760 DDR4 board is a reasonable route. It performs similarly to a Ryzen 7 5800X3D in many games and is considerably stronger in multithreaded workloads. Just make sure the board has an appropriate BIOS and use a strong CPU cooler, since the 14600K can draw quite a bit of power.
The B760 motherboard would be for the 14600K, not for your current 10th-generation processor. Your existing motherboard cannot use the 14600K, so you would need both the new CPU and a compatible LGA1700 board. A DDR4 version of B760 is fine if you want to reuse your memory, but LGA1700 has limited future upgrade potential.
