My current budget doesn't stretch to 2x16GB of DDR5, but I want to pair the memory with an X3D processor. Would it be reasonable to buy a single 16GB stick now and add the exact same model later, or would 2x8GB be the better choice for dual-channel performance?

If 2x16GB isn't affordable right now, 2x8GB is generally the better choice. It gives you dual-channel performance immediately, while a single 16GB stick would run in single-channel mode. You can always replace the kit with 2x16GB later if you need more capacity.
The best long-term setup would be a matched 2x16GB kit, but 2x8GB now is preferable to 1x16GB for gaming if 16GB total is enough. DDR5 systems can be more difficult to run with four populated DIMM slots, so adding two more sticks later isn't always ideal.
Buying one 16GB stick and adding another later can work, especially if you get the same model, but there’s no guarantee the two modules will behave identically. Different production batches can use different memory chips, which may limit stability or prevent the advertised EXPO settings from working reliably. A matched 2x8GB kit is the safer short-term option.

I can afford 2x8GB; the issue is specifically that 2x16GB is outside my budget right now.
