Has anyone else seen unusual battery behavior on an iPhone 17 Pro Max running iOS 27? I set the charging limit to 80%, but the phone continued charging to 86%. Later, while it was no longer connected to the charger, the displayed battery level suddenly jumped from 86% to 96%. Is this a bug, or is the charging limit sometimes overridden intentionally?

The charging limit can occasionally be overridden so the phone can charge fully and recalibrate battery health and percentage estimates. That behavior may be normal and isn't necessarily caused by the update or by running beta software.
If you're using a beta release, some battery and charging glitches are expected. Beta software is mainly intended for testing, so it may be worth waiting for a stable release if the behavior continues.
I installed it mainly to try the newer Siri and AI shortcut features, along with the improved image editing.
This was the first time I noticed it. The part that concerned me most was the battery jumping from 86% to 96% even though the phone wasn't connected to a charger.
