I came across an almost complete setup for sale that includes: a MSI B650 GAMING PLUS WIFI motherboard, a Fanxiang 2TB SSD, a Ryzen 5 7600x CPU, a Thermaltake Toughpower GT 750W power supply, a Thermalright AQUA ELITE 240 AIO cooler, and a Phanteks XT Pro Ultra case. The catch is that it doesn't come with a GPU or RAM, but I'm fine since I already have RAM. The seller is asking for €350, and I might be able to negotiate a lower price. The downside is I can't test the PC thoroughly without a GPU, but the seller is nearby which makes it tempting to check it out anyway. What should I look out for while buying a used PC? Are there any red flags I should be aware of? Would you consider taking this deal?

That 2TB SSD really makes the whole deal worthwhile. I’d definitely go for it!
Definitely do your research on the seller. If he's been active for almost a decade with perfect ratings, that's a strong indicator he's legit. Also, if you plan on selling one of your SSDs for around €120, the actual spend might only be about €250. Sounds like a solid deal to me!

That price is a steal, especially with that 2TB SSD included! You could probably test the system using the integrated graphics from the CPU, as long as you have some DDR5 RAM to use with it. Since you do, you're set for a test. Just add a discrete GPU when you're ready.
