For titles like Horizon Forbidden West or Indiana Jones, will I need to drop settings to achieve frame rates above 60fps (ideally in the 80-120 range) with this setup? I've heard recent games are quite demanding, and I want to avoid a situation where I'm stuck playing at low frame rates.

If you're considering the 7500F, check out the 7700 on AliExpress too; great deals can be found! The 7600 and 7500F are solid for 1080p and should easily handle demanding games at about 70-80fps. I've seen the 7500F even hit over 200fps in games like CSGO, so either should work just fine for your needs!
With the 9060XT, you're likely to hit GPU limitations with either the 7600X or the 7500F for most AAA games. So, while both CPUs can handle 1080p well, be prepared for some scenarios where the GPU is the bottleneck.
