I'm new to building PCs and I'm looking for an AM5 motherboard that has two GPU slots for GPU passthrough. I've already purchased two sticks of DDR5 RAM, but it seems like every AM5 motherboard I come across only has a single GPU slot. I specifically want two PCIe 4.0 slots so I can game on an old CRT monitor I have.

You could get a DisplayPort to VGA cable because they actually exist! That might help you connect your CRT without needing two GPU slots.
