Hey everyone! I'm looking to upgrade my PC while sticking with the AM4 platform. I currently have a Ryzen 5 3600 paired with a 1660 Super, and I'm aiming to play AAA titles like Jedi Survivor at max settings with high FPS at 1080p (I've got a 144 Hz monitor). I'm considering the Ryzen 7 5700X for the CPU but I'm still undecided on the GPU. Any recommendations for a good combo?

You can't go wrong with a 5600/5600X combined with a 9060XT. I've been using a 5600X with a 6750XT for my 1440p gaming, and it’s been great for the last couple of years!
I’d suggest going for a 5600XT or a 5800XT, then pair it with any current-gen GPU. You can significantly boost your performance for a reasonable price! For the GPU, look at the 5060Ti or the 9060XT, preferably the 16GB versions.
If you're sticking with AM4, I wouldn't spend too much on a multi-threaded CPU. A Ryzen 5 5600 or 5600X would give you a decent performance boost without breaking the bank. For the GPU, it really depends on your budget, but the RX 9060 XT 16GB is a fantastic option for 1440p gaming and should serve you well for a while.
