If you want maximum performance from your current setup, the 5800X could be worth considering as well, though it might be a bit pricier. I had a 3070 with the Ryzen 5 5600X and it performed great—no major bottlenecking at 1440p 75Hz with 3600 CL16 RAM. The only downside was limited VRAM, but with your setup, that shouldn't be a huge issue. Just make sure your RAM isn't running too slow; anything below 3200MHz can hold you back, but yours seems fine.
